YORKSHIRE PUDDING


YIELD: 12 PUDDINGS (POPOVERS)

INGREDIENTS:

  • 3 large eggs

  • 2/4 cups of whole milk

  • 3/4 cup of all-purpose flour

  • 3/4 tsp kosher salt

  • 1/4 cup of rendered fat from the prime rib roast, or butter

STEP 1: Preheat oven to 400 F. In a medium bowl, whisk together the eggs and milk. Add four and salt. Wish together until just combined. Allow the batter to rest 30 minutes at room temperature.


STEP 2: Add a teaspoon of fat to each of the muffin cups. Place in pre-heated oven for 5 minutes. Once hot, add batter to the cups, filling them halfway. Return to the oven for 10-12 minutes until the puddings are golden brown and crisp. They should puff up. Serve immediately. Enjoy!
